Our new Brazilian from the Mió coffee farm in the municipality of Monte Santo de Minas, Brazil. For this lot, coffee cherries close to the walls of the fermentation bags are in contact with oxygen, while the cherries in the centre of the pack have no contact with oxygen. This unique mix of anaerobic and aerobic fermentation creates two environments in one. This technique helps create complex flavours and acidity naturally present in coffee - a velvet maple syrup sweetness with gentle notes of honeydew and starfruit. Bright, balanced and complex!
