Raisin / Strawberry / Plum

A bee’s affect of coffee production had not been fully studied until recently. It has now been shown that bees not only contribute to improved livelihoods by improving yields, but they have the added impact of improving coffee quality.

The native honeybee found in the Nyungwe forest and where Cyato coffee is grown, has helped to create the unique profile of this coffee. During pollination the bees leave vital microorganisms on the plants. These help the coffee cherries grow in a more uniform size thus allowing the flavours to develop fully and taste better. Furthermore it has now been recorded that bee pollination can increase the yield between 20-50%. After picking the coffee cherries from the coffee trees they are sorted and floated in clean water to remove any defected beans. The cherries are then dried on raised beds in full sun to avoid any mould or further fermentation. 

We end up with a very juicy and refreshing cup. Effervescent acidity layered with a sticky raisin sweetness with strawberry notes. Excellent through a V60 :)
