Established in 2004 with just 14 primary cooperatives, the union has since grown to represent more than 143,000 smallholder farmers across western Ethiopia. Here, smallholder farmers cultivate heirloom varieties at high elevations, often alongside food crops. The combination of high elevations, careful processing and heirloom varieties gives Jimma coffees their distinctive character.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan style=\"text-decoration: underline;\"\u003eProcess\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003e\u003c\/span\u003e\u003cspan\u003eAt harvest, ripe cherries are delivered to the cooperative, where they are carefully sorted before undergoing washed processing. The coffee is fermented then dried on raised beds, allowing for even airflow and gentle drying.
