Gaitania - Colombia


Toffee / Vanilla / Cookie Dough
Gaitania is located in the southern portion of Tolima in the foothills of the Northern Andes in south western Colombia. Our lot comes from a collective of about 80 farms who are working together to get the best results.
After hand picking and sorting there is a 24 hour fermentation protocol. The cherries are depupled and fermented at each farm. Depulping is a process where all the pulp from the beans is removed. After depulping the beans are put in a water tank where the fermentation process will remove the remainder of the pulp. After the coffee has gone through the fermentation it is taken down to a solar dryer. Here all the coffees are dried together to accomplish a more homogeneous profile and control the moisture levels of all the lots. The resultant beans are then stabilised in grain pro bags for 25 days before being milled.
It has been a while since we have a classic washed Colombian coffee. Here we have a perfect consistent example. Vanilla smooth, toffee sweet and a buttery cookie dough finish - I want more!
