Munchique Espresso - Colombia

Milk Chocolate / Apple / Caramel

We have chosen a special coffee from Colombia for our Espresso.

CENCOIC has been working with indeginous reserves in Colombia exporting high quality coffees since 2008. The Munchique los Tigres reserve is located in the Santander de Quilichao Municipality on the central mountain range in Cauca, Southwest Colombia. The river Mondomo dominates this beautiful reserve, snaking its way around the various ravines and mountain roads. Situated between 1500 to 2000 masl the association who grow this coffee are called Nasa Pkakjera Uss Ya Txnxisa (NAPUY) and they joined CENCOIC in 2012. 

Within each reserve there is a strong emphasis on development, concentrating on productivity and improvement in growing and processing quality. Investment is also made in any environmental concerns, as well as education and improving living standards. Most of the community speak Spanish as their mother tongue but there is currently a drive to revive the local indigenous language, Nasa Yuwe. More bilingual schools have been created as a result.

Each reserve produces coffee with its own unique flavour. As well as growing coffee, the area produces a sugar called Panela, derived from sugar cane. Sugar cane and many other fruit trees grow alongside the coffee and this sweetness contributes to the overall flavour profile observed in this coffee. 

After picking, beans are ‘floated’ – this process removes any which are unripe. They are then pulped and fermented for an average of 14 to 20 hours. The beans are then washed with clean water and spread to dry under the sun in parabolic driers or on patios for around 8-15 days.

A perfectly balanced single origin espresso coffee. Milk chocolate smoothness, subtle apple acidity and a sweet caramel aftertaste for the finish.
