Produced by Luis Anibal and his son Aldemar at Finca Villa Betulia in southwest Colombia. This coffee is harvested by hand, following a strict ripeness criteria: only the perfectly ripened are harvested. It’s then exposed to a natural dry anaerobic fermentation process of 48 hours, before being pulped inside grainpro bags. These are kept at a constant 20° celsius. In this environment bacteria feed on the carbohydrates and sugars from the mucilage, leading to a higher concentration of lactic acid. Later the beans are dried in parabolic beds to an ideal moisture content.
This microlot is 100% Caturron. This varietal is a rare and exotic mutation of Caturra found for the first time in Acevedo Huila. Growers started planting caturron due to its resistance to leaf rust, its high yield and its superlative flavours.
An extremely complex coffee with delicate notes of tropical fruits. We taste lychees, passion fruit and mango complemented by a smooth silky dark chocolate finish. Maravilloso!
