We're thrilled to introduce Boreta - an exceptional coffee and our first release in collaboration with Coffee Legends, an Ethiopian specialty green coffee importer known for both outstanding quality and a strong commitment to transparency between producers/farmers and roasters.

This lot has been grown in small plots of land in the village of Boreta, where this coffee derives its name. Boreta sits in the highlands of Arbegona, part of the renowned coffee growing region of Sidama. Sitting at elevations of up to 2330 metres above sea level; it’s among the highest coffee-growing areas in the country, putting it under the category of 'Highland Coffee'. The area’s nutrient-rich soil, lush forests, and abundant biodiversity create ideal conditions for cultivating exceptional coffee - Boreta being a perfect expression of this.

Grown by smallholders, the cherries are then processed at Daye Bensa’s Arbegona processing station. They are floated in large water tanks to be sorted for density and quality. The cherries are washed of their mucilage before being transferred to African raised beds where they are rotated every 30 minutes to ensure even drying - this takes between 12-15 days depending on the weather conditions.

The result is a beautifully clean yet complex cup with prominent floral aromas and plenty of berry notes - yielding flavours like raspberry with that perfect balance of sweet and tart. This is complemented with a buttery texture like that of shortbread. We recommend brewing using pour over or other filter methods to allow these flavours to shine through.
