A mother and daughter duo, Alexandra and Stephanny Fernandez Elizondo, bring us this excellent coffee from Santa Maria de Dota, in the San José province of Costa Rica. Established in 2019, since then they have been wholly committed to improving quality and keeping traceability and sustainability at the centre of their operation. The name ‘Nubes’, meaning ‘clouds’ in English, was given as this particular plot of land is often covered by clouds due to its high altitude. It is the smallest plot of land that the team pulls their micro-lots from. Due to the small size, this lot gets some of the most detailed attention.
The processing on this lot begins with fermenting the coffee in the fruit for 24 hours in poly bags. The cherries are then placed into a small de-pulper to strip the seed of its fruit flesh, but leave nearly all the mucilage on the parchment. The coffee is moved on to raised drying beds inside their greenhouse, where they move the drying parchment every hour or two during sunlight hours in order to get the coffee down to its correct moisture content. This process takes around 12-15 days. Once the coffee is ready to be stored, they place the parchment in bags, rest it in their bodega for a few weeks and then finally prepare it for export.
Ceres Nubes works beautifully as a filter coffee. The honey process on this lot enhances this coffee’s sugary, sweet character. Expect a balanced cup with rounded sweetness and a syrupy mouthfeel - think of flavours like stewed apple and stroopwaffel!
