Ñuu Savi, translating to ‘People of the Rain’ in the Mixtec language, are an Indigenous people of Mexico. Sitting in the west of the state of Oaxaca is the mountainous Sierra Mixteca region, where cool climates and abundant shade trees have produced this beautiful coffee with gentle cacao flavours, subtle fruit notes and a smooth finish.
This lot was grown by the Mixtec Indigenous community in Guadalupe Miramar. These small-scale growers own plots no larger than half a hectare and use little to no agricultural intervention. Though this produces low yields, they are focused on maintaining the region’s cultural heritage and preserving a strong connection to nature and land.
However, small producers in Oaxaca face difficulties cultivating coffee due to unpredictable weather and crop diseases brought on by climate change. Despite these challenges, farmers have continued to press on. The use of agroforestry, which is the intentional integration of trees and shrubs into farming systems, is one way they are adapting to this.
Growers in Oaxaca embrace shade-grown methods; the use of native trees to shelter their coffee plants from direct sunlight. Among many benefits, such as increased biodiversity and sustainable land use, this also enhances the flavour of the coffee. Shade-growing results in slower maturation of the coffee cherry, which helps the sugars and complex flavour compounds in the cherry to develop fully.
The earthy chocolate flavour of cacao nibs forms the base of this flavour profile, which is complemented by the sweetness of Medjool date. Hints of lime add a lighter, fruity component, creating a well-rounded profile. Enjoy this coffee using a variety of brewing methods. Brew with a V60 or other pour-over methods for more clarity in your cup. Immersion brew methods such as French press will work well to bring out more body and sweetness from this coffee.
