Enjoyed black, it’s syrupy, layered with stewed fruit sweetness and dark chocolate undertones. Paired with milk, it softens into a creamy hazelnut-like sweetness with hints of vanilla.

Grown by Márcio Milano, from a family that has been producing coffee in the region for over a century. His grandfather was among the first to cultivate coffee in Chapadão de Ferro, and today Márcio runs the farm with his wife and son, focusing on Red Catuaí and Mundo Novo varieties.
Region
Chapadão de Ferro is a microregion within Cerrado Mineiro, with farms at relatively higher altitudes compared with the rest of the region, and many clustered around a partially formed volcanic crater. Its iron rich soils - reflected in the name 'plateau of iron' differentiate it from others in the region. This supports consistent ripening and helps produce denser, more uniform beans
Process
Once ripe, the most uniform cherries are selected and then dried whole on concrete patios under the sun - following Brazil’s traditional natural processing method. From here, they are carefully managed to ensure even drying, after which they are hulled. This often enhances fruit-forward flavours and body in the cup.
