A classic, easy-drinking cup with a balanced profile. Expect crisp red apple sweetness and a soft date-like finish. Its washed process lends a clean, simple acidity and a gentle sweetness. The result is a lighter, more delicate body than you would find in naturally processed coffees. Certified Organic and Fairtrade, this coffee demonstrates that responsibly produced coffees can also be high-quality, expressive and delicious in the cup. 

Producer

What makes this coffee special is that it is part of a project dedicated to conserving forests, protecting wildlife, and encouraging sustainable farming practices across the cooperative. It is grown by members of the Cooperativa Agraria Frontera San Ignacio in the buffer zones surrounding a protected natural area where native wildlife faces increasing pressure and risk of extinction.

The name El Oso is a nod to the Spectacled Bear that inhabits the surrounding forests, a species whose habitat is under growing threat as these ecosystems come under strain. The project was created with two main aims: to support the conservation and protection of these natural ecosystems, while also strengthening producer engagement and improving livelihoods by building greater economic sustainability within the cooperative.

Region

The farms surround the ⁠Santuario Nacional Tabaconas Namballe protected national sanctuary in San Igancacio. The San Ignacio Province sits at the top of the Cajamarca region in Northern Peru, sharing a border to the north with Ecuador. This prominent coffee-producing district is recognised for its high altitudes and association with organic and Fairtrade production.

Process

The coffee is fermented for 18 to 36 hours, often in barrels made from fallen Romillo trees, which are native to the area. The cherries are then fully washed, before being spread to dry for between 10 to 21 days.
