This exceptional Pink Bourbon comes from Eden Farms, a collective of three farms located across different areas of Quindío, Colombia. The project is led by Viviana Martinez, a young, fourth-generation coffee farmer whose vision is focused on cultivating rare varietals and pushing the boundaries of processing innovation.
Viviana works with a wide range of methods — from washed and natural to co-fermented and extended fermentations — always with the goal of enhancing clarity, complexity, and expression of terroir. For our Special Range, we selected this standout Pink Bourbon, fermented for 15 days in an anaerobic environment. The coffee is then carefully dried in a silo at a controlled temperature of 40–50°C, ensuring consistency and preserving its vibrant character.
In the cup, expect a lively and expressive profile with notes of fizzy apple, rose lemonade, and lychee, delivering a sparkling acidity and floral sweetness.
We partnered with Minga Coffee to bring this coffee to the UK market, supporting Viviana in expanding her reach and ensuring transparent, responsible export of this unique lot.
