Our latest offering comes from Corquin in the region of Copán in Honduras, where the farmers of the CAFESCOR cooperative have grown this coffee at altitudes up to 1,700 metres. These farmers come from various municipalities and cultivate coffee on small parcels of land in the mountainous region. Cafés Especiales Corquin, S.A. de C.V. (CAFESCOR) is a cooperative that began in 2012 as an initiative by small coffee growers and is now a certified-organic Fairtrade association, helping its members grow high-quality coffee and earn sustainable incomes.
The cooperative has a wet mill located in the community of Las Casitas and a dry mill in the community of Jimilile, both in the municipality of Corquín. Farmers carefully handpick the ripest coffee cherries and deliver them to CAFESCOR’s wet mill, where they are visually sorted and pulped. The beans undergo fermentation, are washed with clean water, and initially dried on patios. During this pre-drying stage, workers inspect the wet parchment and remove any defective beans. The coffee is then transferred to mechanical dryers, where it is slowly dried to a moisture content of 12% over the course of 33 to 35 hours.
We like this coffee for its nutty profile, maple syrup sweetness and earthy undertones of vanilla. Peanut butter was one of our first thoughts, but its nuttiness is also reminiscent of almonds or hazelnuts. This is well balanced cup offering sweetness and a smooth, creamy mouthfeel.
