A beautifully classic washed Guatemalan with a rounded, chocolate-forward profile. Buttery notes of peanut butter compliment rich notes of dark chocolate and caramel, creating a smooth, sweet and balanced cup. Versatile and easy to enjoy, it works equally well using filter or espresso style brewing methods, and is particularly well suited to a Moka pot, AeroPress and Cafetière.
Producer
Andrés Godolfredo Cano is a second-generation coffee producer from Huehuetenango, Guatemala. From a young age, he dreamed of owning his own coffee farm, and after years of hard work and saving, he was able to buy his land. Today, coffee remains his greatest passion. Andrés takes pride in cultivating healthy coffee trees while caring for the natural environment that sustains coffee farming in Huehuetenango. By managing his farm efficiently, he aims to conserve local resources and help ensure a sustainable future for the next generation of producers.
Processing
Only fully ripe cherries are hand-picked before being depulped the following day using a minimal amount of water. Lately at the farm, Andrés has introduced a longer fermentation, allowing the coffee to ferment for 2 days after depulping. They are then washed and dried patios for around five days until they reach their ideal moisture content.
