Jorge Osorio's farm El Paraíso reflects the new generation of Colombian coffee production. Working alongside his son, Jorge has shifted from traditional volume farming to a quality-focused approach, with selective hand-picking of cherries at peak maturity and meticulous approach to fermentation and drying. For the Osorio family, the goal is to go beyond simply cultivating coffee by carefully refining every lot.
Process
Jorge, along with his team of pickers, hand-pick the ripest cherries and place them in the sorting area at El Paraíso farm, where they are sorted by hand and floated to remove underripe and defective cherries. The cherries then undergo 30 hours of underwater fermentation, promoting the development of a sweet and bright profile. After pulping and washing, the coffee is dried slowly in thin layers on parabolic beds, where careful monitoring ensures even drying and preserves cup quality.
