With the help of Brazilian coffee importers Unic Coffee, we’ve selected a coffee that is sweet, full-bodied and structured. This time, we’ve chosen a naturally processed coffee, offering you a richer body and mouthfeel. Expect a chocolate and hazelnut base, with a caramel sweetness. This is our most versatile coffee, performing beautifully across a range of brew methods, from cafetière to stovetop.
Producer
Edmar de Souza Rezende’s family started coffee production in their small property in São Sebastião do Paraíso in 1971. He eventually took over, buying more properties around the farm, and now he has three farms producing the varieties Mundo Novo, Red Catuaí, and Yellow Catuaí.
Processing
Once the cherries reach 90% maturation, they are harvested and rested on concrete patios for 48 hours. After this period, they are spread in thin layers and turned every hour. From there, they go to the mechanical dryer. Drying is carried out in cycles: 12 hours of drying followed by 12 hours of resting. This process takes about three days. When the cherries reach 12.5% moisture, they are rested in wooden bins for seven days to ensure a uniform moisture level of 11% to 11.5% is reached, before being hulled.
