This yeast-inoculated washed lot from Colombia balances bright fruit with delicate florals. The controlled fermentation adds some complexity, without feeling heavy. Its character is reminiscent of strawberry, jasmine tea, and ripe nectarine, with a clean, refreshing finish. 

Producer

Villa Pastora farm, in Palestina, Huila, is named after its founder Pastora Anacona, Yulieth and Gerson’s grandmother. Pastora planted the farm's first coffee trees in the 1980s and established a tradition that continues through the Mora Ortega family today. Now in its third generation, the family-run farm is dedicated to producing exceptional coffees through careful cultivation, thoughtful processing, and sustainable farming practices.

Beyond their own production, Villa Pastora plays an important role in its local community. The farm employs local workers, shares fermentation advice with neighbouring producers, and provides drying services for growers without access to the necessary infrastructure.

Process

Ripe cherries are carefully harvested, floated to remove defects, and depulped before being transferred to barrels for alcoholic fermentation. A selected strain of Saccharomyces cerevisiae yeast is introduced to extend mucilage fermentation and enhance complexity. After fermentation, the coffee is dried on patios for approximately 15 days until it reaches the ideal moisture content.
