Honeydew Melon / Plum Tea / Maple Syrup
A coffee for the season. An easy-drinking addition to our Special Reserve Collection, with a distinctly autumnal character. Honeydew melon leads into sweet plum tea, with a smooth maple syrup sweetness on the finish.
Producer
Finca La Gardenia sits high in the mountains of Pianche, Malacatancito, where producer Eddy is equally committed to exceptional coffee and the ecosystem that surrounds his farm. The farm grows exotic varieties and experiments with different processing methods to explore and showcase the unique potential of the region. Through careful attention at every stage, from cultivation through processing, Finca La Gardenia is able to produce coffees of outstanding quality.
That same attention extends to the land itself. Eddy works to preserve the farm’s trees and the various bird and animal life that rely on these trees, while also protecting nearby spring water from contamination. The farm has also pursued environmental certifications, including Rainforest Alliance, as part of its commitment to conserving Huehuetenango’s delicate ecosystems.
Process
Ripe cherries are picked and begin drying on the patio around four hours after harvest. For the first five days, the coffee is dried on patios in the sun from 9am to 3pm and turned hourly for even drying. The coffee is then moved to African-style raised beds, where they are turned hourly and continue to dry slowly. After around 22 days, the drying process is complete.
