White Tea / Pomegranate / White Tea

A beautiful washed Colombian coffee with fruity sweetness, vibrant notes of pomegranate and delicate elderflower florals. Expect a clean, light-bodied cup with a silky, tea-like finish.

Yenifer Rojas Trujillo grew up in Gigante, Huila, where coffee has been part of her family's story for generations. Fifteen years ago, she began her journey by taking cupping classes, developing a passion for flavour, quality, and the craft behind exceptional coffee.

Building on the work her parents began more than twenty years ago, Yenifer has continued to evolve the family farm through a balance of tradition and innovation. Her four-hectare farm, Varietales, sits between 1,750 and 1,800 metres above sea level,  providing the perfect conditions for producing exceptional coffees. Beyond coffee, she cultivates yucca and plantain, embracing a holistic approach to farming while supporting biodiversity. 

Process

This coffee undergoes 12 hours of fermentation in tanks, followed by depulping and a further 48 hours of fermentation before being washed. It is then dried for around 15 days in a traditional marquesina, preserving its clean, floral, and fruit-forward character.
