Marino and Viviana Ruiz have a 5-hectare farm passed down from Marino’s father, where this microlot of Pink Bourbon was grown. As well as coffee, the farm grows diverse crops and is re-planting shade trees to restore a more diverse ecosystem and protect against increasingly unpredictable weather conditions.

Characterised by the unique pink colour of its ripe cherries and complex flavour profile, interest in the Pink Bourbon variety has been growing year after year. It is primarily grown in Huila, Colombia, with recent research genetically identifying it as an Ethiopian Landrace. 

This coffee was sourced once again with the help of Minga Coffee, whose mission is to spotlight dedicated small-scale farmers producing exceptional coffees - many of whom are accessing the specialty market for the first time. 

The cherries were hand-picked at peak ripeness, then floated to remove defects. They were oxidised for 24 hours, depulped, then dry-fermented for 48 hours. After this, they are fully washed and dried on shaded and ventilated patios. The washed process lets this unique variety and terroir shine through in the cup.

The result is a beautifully balanced and clean cup that opens with floral notes of rosehip tea, followed by a rounded grape acidity and jammy sweetness of stewed plums.
